Unbleached flour is a naturally aged flour which is ivory white in colour. Bleached flour is treated to whiten it faster, which also makes it slightly softer. Honestly, both work, but bakers usually use unbleached flour for sturdy things like breads, and bleached flour for cookies and cakes when they want that super soft, fluffy texture.

If you're avoiding gluten, don’t worry – you’ve got options like almond, oat, coconut, and even chickpea flour. There’s literally something for everyone.

Sugar does way more than make your desserts sweet. It provides sweetness (duh, obv!) and helps your cakes and cookies brown beautifully in the oven because sugar caramelises when heated.
