About Gessica
Vegan for 18 years, cook for 16 .. A passion started as a child behind the stove with her mother, grandmother and aunt. The choice to become vegan at the time when the ingredients had to be discovered and invented. Then the catering work, social dinners, festivals. But what really changed my approach to cooking was meeting my teacher, a Japanese cook with whom I worked for 3 years in a macrobiotic restaurant in Brussels. With her I discovered the true essence of the transformation of food, the importance of alchemy and the balance of the elements to arrive at dishes with unique flavors and perfect nutritional value.

The first lesson takes place with a general theoretical part on nutrition and macrobiotics, and a practical part on what are the necessary tools in the kitchen, the choice of the knife, how to sharpen it and how to take care of it. The following lessons aim at a basic approach on the method of cooking cereals and legumes, the importance of cutting vegetables with respect to the fire, how to use algae, raw and lactofermentations, tofu, tempeh and seitan, how to season with tamari and shoyu and with oils other than olive oil. These are the bases to then combine these ingredients in more elaborate recipes, but also with traditional and Mediterranean recipes accompanied by those of desserts with and without sugar or gluten.
